Fabula: the enchanting spot in the Marais returns for a captivating gourmet break
From May 8 until next October, let yourself be seduced by Fabula's responsible and plant-based menu, made up of local and seasonal products. After two highly successful seasons, with chefs Thibaut Spiwack then Julien Dumas at the helm, this year the ephemeral restaurant invited starred chef Thomas Chisholm. Recognized for his creative and committed cuisine, with vibrant colors and bold textures, the former top chef makes it a point of honor to offer fresh and ethical cuisine. On the menu, a carpaccio of beetroot, radishes and pickled apples, coupled with a peanut-sate sauce and garlic yogurt or a black and white-style vitello tonnato , enhanced by a marbled garlic sauce. squid ink. On the drinks side, the sophisticated, plant-inspired cocktails are designed by Vincent Denier, winner of the Bartenders Challenge 2023.
